The kids and I are having popcorn for lunch today. We’re low on fresh veggies, which they usually have. Oh how I long for the days when our garden and locally grown farmers market produce feed us again. We’ve been in the depths of winter for longer than any winter I can remember in recent history. Another squall line just went through. This may be the coldest February on record in a long time. Usually by now there has been at least a slight sneak peek at spring. Not this year, where we have rejoiced at (very few) 2 and 3 degree Celsius days.
Coupled with the weather, I came home last night from one of the most emotionally draining experiences I’ve had in a very long time. Suffice it to say, I’m not feeling particularly motivated to be creative today. But things are okay. Because popcorn is fun and the kids are always happy when I make it. It’s a whole grain, and with some fresh fruit for dessert, it’s a fairly healthy lunch. And it’s simple.
And some days just cry out for simple. That’s life. And part of the journey.
