Gluten Free Jalapeno Cheese Cornbread Muffins

Feeling Inspired

The sun shone yesterday and it was “warm” enough to go out in a light jacket.  Sure, it was only about 10C, but it was welcome.  There was warmth in the sun as it poured over my face!  We had a similar day this past weekend, and I took advantage of it to grill some steaks, which I  haven’t done since December.

The weather further inspired me to crave cornbread.  Well, the weather and a random comment, probably on Twitter.  Some days the product of my kitchen is also the product of my impulsiveness.  It’s good that I don’t have copious amounts of good chocolate and cream on hand very often. Maple Fig Squares

Maple Fig Squares | My Edible JourneyThese squares excite me.

What?  I know, they don’t look exciting.  In fact, they look like a paler cousin of the date square.  And yeah, they are.  But they excite me because they’re full of possibility.  From the filling to the crust to the topping, they can be changed up in so many ways to make them completely different.

I was originally going to use a mix of dried figs and apricots in them, until I realized that my daughter had eaten the apricots.  But already I’m wondering about other fruits.  Like dried cherries!  Oh.my.gosh.  Can you imagine?  If you love cherries like I do, you’ll understand my excitement. One of Those Days

The kids and I are having popcorn for lunch today.  We’re low on fresh veggies, which they usually have.  Oh how I long for the days when our garden and locally grown farmers market produce  feed us again.  We’ve been in the depths of winter for longer than any winter I can remember in recent history.  Another squall line just went through. This may be the coldest February on record in a long time.  Usually by now there has been at least a slight sneak peek at spring.  Not this year, where we have rejoiced at (very few) 2 and 3 degree Celsius days. Healthy Cocoa Oatmeal Cookies

Healthy Cocoa Oatmeal Cookies | My Edible Journey

I hesitate to put the label “healthy” on something like cookies

I mean, they still have sugar and fat and wheat flour in them.  But compared to conventional cookies, these are a good bit healthier.  They’re also still clearly a treat, and not a meal replacement or anything. Continue reading

Raspberry Mousse

Raspberry Mousse | My Edible Journey

We’re not big on Valentine’s Day in our house.

Not being in school, there are no Valentine boxes to hang from desks, no cutesy cards (or glut of candy) to buy for classmates, no counting to see who got more…  My husband and I similarly haven’t ever done much to mark the occasion.  I think one year, while we were dating, I made him a huge heart shaped chocolate chip cookie.  LOL Continue reading

Za’atar

Za'atar Spice Blend | My Edible Journey We were housebound yesterday, in the grips of yet another “winter storm” (I remember when this was just called “winter”).  A lot of snow fell!  The birds were frantic at the feeder (oh! A robin!), flapping against the wind to get some much needed nourishment and even the dog didn’t want to venture more than a few steps from the door to do what she needed to. Continue reading

English Muffin Bread

English Muffin Bread | My Edible Journey

Sometimes things have to be simple

It’s been one of those weeks.  We’re all sick, probably with the flu.  We’ve each gone through varying degrees of coughing, sniffling, fever, chills and lethargy since the week began.  Sometimes, when I get sick, I get antsy.  I have to move and do, but with precious little energy for either (or for taking a wide variety of photos, obviously).  So I was thankful to be able to channel what restlessness I had into something simple and delicious that has been easy on sick tummies all week. Continue reading

A Legacy

My Grandmother's Legacy | My Edible JourneyAfter my paternal grandmother died, my father found a couple of notes she’d written.  She wanted to make sure that I (the eldest granddaughter) got a few things, like her china, and a curious little rolling pin.  I was in my early 20’s when she passed, which makes the notes all the more remarkable.  She never mentioned them to anyone, and wrote them when I was barely 6! Maple Meyer Lemon Vinaigrette

Salad with Maple Meyer Lemon Vinaigrette | My Edible JourneyMeyer Lemon Season

It’s that time of year again. Meyer lemons are everywhere. Pinterest, Instagram, Twitter… Oh, and in grocery stores.  Thought to be a cross between a lemon and possibly a Mandarin orange, Meyer lemons are a delight.  They are less tart than their pure counterparts, and have a delightful floral quality that brings so much to dishes that they’re used in. Continue reading

Veggie Chili

Veggie Chili | My Edible Journey

Wow, has it been cold.  We haven’t seen cold like this in years.  We saw -30C (-22 in American measures) with the windchill yesterday.  And that was the HIGH temperature!  We had a reprieve on the weekend, hovering around the freezing mark, but the wind was still bitter.  And this weekend promises to be milder, but very wet.  It’s time for chili. Continue reading
